Easy Greek Yogurt Zucchini Recipe

  • 2 cups Greek yogurt
  • 2 medium zucchinis
  • Salt to taste
  • Olive oil


  1. Grate the zucchinis and sprinkle them with salt. Let them sit for 10 minutes to release excess moisture.
  2. After 10 minutes, squeeze the grated zucchinis to remove as much moisture as possible.
  3. Heat a skillet over medium heat and add a drizzle of olive oil.
  4. Add the grated zucchinis to the skillet and cook for 3-4 minutes, or until they begin to soften.
  5. In a bowl, mix the Greek yogurt with a pinch of salt.
  6. Serve the cooked zucchinis with a dollop of the seasoned Greek yogurt on top.
