Easy Indian Hemp Seed Potato Curry

Ingredients
- 4 potatoes, peeled and cubed
- 1/2 cup hemp seeds
- 1/2 cup dried fruits (raisins, apricots)
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- Salt to taste
- 2 cups water
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and minced garlic, and sauté until they are soft and golden.
- Stir in the ground cumin, coriander, turmeric, and cayenne pepper, and cook for another minute to release the flavors.
- Add the cubed potatoes and hemp seeds to the pan, and stir to coat them with the spices.
- Pour in the water, and bring the mixture to a boil. Then reduce the heat, cover, and simmer for about 15-20 minutes, or until the potatoes are tender.
- Once the potatoes are cooked, stir in the dried fruits and let them simmer for another 5 minutes.
- Season with salt to taste.
- Serve the curry hot, garnished with fresh cilantro.
