Easy Roast Cabbage with Canned Vegetables

  • 1 small head of cabbage, cored and sliced
  • 1 can of mixed vegetables
  • 1 roast of your choice
  • Salt and pepper to taste


  1. Preheat the oven to 375°F.
  2. Season the roast with salt and pepper, then place it in a roasting pan.
  3. Arrange the sliced cabbage around the roast in the pan.
  4. Pour the canned vegetables over the cabbage.
  5. Cover the roasting pan with foil and roast in the oven for 1 hour.
  6. Remove the foil and continue roasting for another 30 minutes, or until the roast is cooked to your desired doneness and the cabbage is tender.
  7. Once done, let the roast rest for a few minutes before slicing.
  8. Serve the roast with the roasted cabbage and canned vegetables.
