- 4 packs of instant ramen noodles (discard seasoning packets)
- 1 cup cooked and shredded chicken

- 1 cup diced bell peppers (any color)
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 tablespoon achiote (annatto) powder
- 1 teaspoon ground cumin

- 4 boiled eggs, halved
- Fresh cilantro, chopped (for garnish)

Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until translucent and fragrant.

- While the broth is simmering, cook the ramen noodles according to package instructions. Drain and set aside.
- Divide the cooked ramen noodles evenly among 4 bowls.
- Ladle the hot broth with vegetables and chicken over the noodles in each bowl.
- Top each bowl with a halved boiled egg and a sprinkle of fresh cilantro.
