Edamame and Cauliflower Mexican Delight

Ingredients
- 1 cup of edamame (shelled)
- 1 medium cauliflower head, chopped into florets
- 1 large onion, diced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Optional: Fresh cilantro for garnish
- Optional: Lime wedges for serving
Instructions
- Heat the oven to 400°F (200°C).
- Chop the cauliflower into florets and dice the onion.
- Toss the cauliflower florets in 1 tablespoon of olive oil, cumin, chili powder, salt, and pepper.
- Spread the cauliflower on a baking sheet and roast for about 20-25 minutes, until golden and tender.
- While the cauliflower is roasting, heat the remaining tablespoon of olive oil in a large pan over medium heat.

- Once the cauliflower is done roasting, add it to the pan with the edamame and onions.

- Transfer the mixture to a food processor and pulse a few times until you reach your desired consistency. You can keep it chunky or make it smoother, depending on your preference.
- Spoon the mixture onto plates and garnish with fresh cilantro and lime wedges if desired.
