- 1/2 cup Almond Slivers, toasted
- 1 tsp Lovage Salt Blend (or to taste)
- 2 large Oranges, segmented
Instructions
- In a pot, combine 1 cup of balsamic rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 30-35 minutes or until the rice is tender and the water is absorbed. Allow it to cool.
- In a small bowl, mix the elderberry concentrate with a pinch of lovage salt blend. Adjust seasoning to taste.
- In a dry skillet over medium heat, toast the almond slivers until golden brown, stirring frequently to avoid burning. Remove from heat and let cool.
- In a large mixing bowl, combine the cooked balsamic rice, chopped mint, toasted almond slivers, and orange segments.
- Drizzle the elderberry dressing over the rice mixture and gently toss to combine, ensuring all ingredients are well-coated.
