A simple and delicious recipe perfect for feeding a family of six.
Ingredients
- 2 cups of cooked rice
- 1 pound of ground beef
- 1 can (15 oz) of black beans, rinsed and drained
- 1 cup of corn
- 1 cup of salsa
- 1 cup of shredded cheese (cheddar or Mexican blend)
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in cumin, chili powder, salt, and pepper.
- Add black beans, corn, and salsa to the skillet. Mix well and cook for 5 minutes.
- Stir in the cooked rice and combine thoroughly.
- Top with shredded cheese and cover until the cheese melts. Garnish with cilantro if desired.
