Fermented Cauliflower and Carrot Salad Recipe

Ingredients

  • 1/2 head of cauliflower, chopped into bite-sized pieces
  • 2 carrots, peeled and chopped into matchsticks
  • 1/2 cup of your favorite brand of sourkraut
  • 1/4 cup of olive oil
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of honey
  • salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the chopped cauliflower and carrots.
  2. Add the olive oil, apple cider vinegar, honey, salt, and pepper to the bowl and toss well to combine.
  3. Add the sourkraut to the bowl and gently mix everything together.
  4. Cover the bowl with a lid or plastic wrap and place it in the fridge for at least 1 hour to let the flavors and probiotics meld together.
  5. Once ready to serve, give the salad a good stir to distribute any dressing that may have settled at the bottom of the bowl.
  6. Serve the salad chilled and enjoy the tangy, crunchy flavors!
