Fiery Fennel and Kale Vegan Stew

Ingredients

  • 1 fennel bulb, thinly sliced
  • 4 cups kale, chopped
  • 2 tablespoons vegetable oil
  • 1 pressure cooker

Instructions

  1. Heat the pressure cooker over medium heat and add the vegetable oil.
  2. Add the thinly sliced fennel bulb to the pressure cooker and sauté until it starts to caramelize and turn golden brown.
  3. Once the fennel is caramelized, add the chopped kale to the pressure cooker and sauté until it wilts down.
  4. Add 4 cups of water to the pressure cooker and lock the lid in place. Bring to high pressure over high heat, then reduce the heat to low and cook for 5 minutes.
  5. Release the pressure using the quick-release method and carefully open the lid.
  6. Season the stew with salt and pepper to taste.
  7. Serve the fiery fennel and kale vegan stew in bowls and enjoy the bold and flavorful creation.
