Fiery Fennel and Kale Vegan Stew
What Started it all:
Fennel bulb, Kale, vegetable oil, pressure cooker
<em>(Intensely chopping the kale and slicing the fennel with precision)</em>
Ingredients
- 1 fennel bulb, thinly sliced
- 4 cups kale, chopped
- 2 tablespoons vegetable oil
- 1 pressure cooker
Instructions
- Heat the pressure cooker over medium heat and add the vegetable oil.
- Add the thinly sliced fennel bulb to the pressure cooker and sauté until it starts to caramelize and turn golden brown.
- Once the fennel is caramelized, add the chopped kale to the pressure cooker and sauté until it wilts down.
- Add 4 cups of water to the pressure cooker and lock the lid in place. Bring to high pressure over high heat, then reduce the heat to low and cook for 5 minutes.
- Release the pressure using the quick-release method and carefully open the lid.
- Season the stew with salt and pepper to taste.
- Serve the fiery fennel and kale vegan stew in bowls and enjoy the bold and flavorful creation.
