Fiery Greek Quinoa Stir Fry

  • 1 cup quinoa
  • 2 cups broccoli florets
  • 1 can of beans (kidney beans or black beans work well)
  • 1/4 cup olive oil
  • 1 red onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Crumbled feta cheese for garnish
  • Fresh lemon wedges for serving


  1. Rinse the quinoa thoroughly and cook it according to the package instructions. Set aside.
  2. In the same wok, heat the olive oil over medium heat.
  3. Add the sliced red onion and sauté until softened.
  4. Add the minced garlic, dried oregano, and dried thyme. Cook for another minute until fragrant.
  5. Toss in the broccoli florets and beans. Stir-fry for 5-7 minutes until the broccoli is tender-crisp.
  6. Add the cooked quinoa to the wok and stir to combine all the ingredients.
  7. Season with salt and pepper to taste.
  8. Serve the fiery Greek quinoa stir-fry in bowls, garnished with crumbled feta cheese and a squeeze of fresh lemon juice.
