Fiery Hemp Seed Onion Chutney

  • 1/2 cup hemp seeds
  • 1 large onion, finely chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup balsamic vinegar
  • Instant pot


  1. Heat the instant pot on sauté mode and add the hemp seeds. Toast them until they turn golden and aromatic.
  2. Add the chopped onion to the pot and sauté until it turns translucent and slightly caramelized.
  3. Pour in the apple cider vinegar and balsamic vinegar. Stir well to combine.
  4. Lock the lid of the instant pot and set it to pressure cook for 5 minutes.
  5. Once the pressure cooking is done, allow the pot to naturally release pressure for 10 minutes.
  6. Carefully open the lid and give the chutney a good stir. If the consistency is too runny, switch the instant pot back to sauté mode and cook, stirring frequently, until it thickens to your desired consistency.
  7. Transfer the chutney to a serving bowl and let it cool before serving.
