Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 bell peppers, diced
  • 1 can of beans, drained and rinsed
  • 1 cup of beef or vegetable broth
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the lamb with salt and pepper.
  2. In a large skillet over high heat, sear the lamb until browned on all sides. Remove and set aside.
  3. In the same skillet, sauté the onions, bell peppers, and garlic until softened.
  4. Add the tomato paste, oregano, and thyme, and cook for another minute.
  5. Transfer the vegetable mixture to a slow cooker.
  6. Place the seared lamb on top of the vegetables.
  7. Pour in the broth and add the drained beans.
  8. Cover and cook on low for 6-8 hours, or until the lamb is tender.
  9. Once done, adjust the seasoning if needed.
  10. Serve the stew in bowls, garnished with fresh parsley.
