Fiery Italian Lentil and Green Bean Soup

Start by rinsing the lentils under cold water and then place them in a pot with enough water to cover them. Bring to a boil and then simmer for about 20 minutes, or until the lentils are tender.

Ingredients

  • 1 cup of lentils
  • 1 cup of green beans, trimmed and cut into bite-sized pieces
  • 2 cups of strong brewed coffee
  • 1 blender

Instructions

  1. Start by rinsing the lentils under cold water and then place them in a pot with enough water to cover them. Bring to a boil and then simmer for about 20 minutes, or until the lentils are tender.
  2. In a separate pot, blanch the green beans in boiling water for 3-4 minutes, then drain and set aside.
  3. Once the lentils are tender, add the blanched green beans to the pot and pour in the strong brewed coffee. Let the soup simmer for another 10 minutes to allow the flavors to meld.
  4. Carefully transfer the soup to the blender and blend until smooth. If the soup is too thick, you can add a bit of water to reach your desired consistency.
  5. Season the soup with salt and pepper to taste, and serve hot, garnished with a drizzle of olive oil and a sprinkle of red pepper flakes for an extra kick.
