This bold and flavorful stir-fry combines succulent pork loins with crisp cucumber and tender beans, all cooked to perfection in a sizzling wok. Perfect for a weeknight dinner that packs a punch!


  • 2 pounds pork loins, thinly sliced
  • 2 cucumbers, thinly sliced
  • 1 pound green beans, trimmed
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili paste (adjust to taste)
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 1/4 cup chopped scallions (for garnish)
  • Sesame seeds (optional, for garnish)


  1. Prep the Ingredients: Thinly slice the pork loins and set aside. Slice the cucumbers and trim the green beans.
  2. Make the Sauce: In a small bowl, mix together the soy sauce, hoisin sauce, rice vinegar, and chili paste. Set aside.
  3. Heat the Wok: Heat the vegetable oil in a large wok over high heat until shimmering.
  4. Cook the Pork: Add the minced garlic and ginger to the wok, stir-fry for about 30 seconds until fragrant. Add the sliced pork loins to the wok, season with salt and pepper, and stir-fry until browned and cooked through, about 5-6 minutes.
  5. Add the Vegetables: Add the green beans to the wok and stir-fry for about 3-4 minutes until they start to soften. Add the cucumbers and stir-fry for another 2 minutes until they are tender-crisp.
  6. Combine and Serve: Pour the sauce over the pork and vegetables, tossing to coat everything evenly. Continue to stir-fry for another 2-3 minutes until everything is well combined and heated through. Taste and adjust seasoning if necessary.
  7. Garnish and Serve: Transfer the stir-fry to a serving platter. Garnish with chopped scallions and sesame seeds if desired.
