Ingredients

  • 2 salmon fillets
  • 1 cup milk
  • 1 head of broccoli, chopped
  • 200g pasta of your choice
  • 50g grana padano cheese, grated
  • 1 onion, finely chopped
  • Salt and pepper to taste
  • Red pepper flakes (to your preferred level of spiciness)

Instructions

  1. Preheat the oven to 400°F.
  2. Place the salmon fillets on a baking tray, season with salt, pepper, and a generous sprinkle of red pepper flakes.
  3. Bake the salmon for 12-15 minutes, or until it is cooked through and flakes easily with a fork.
  4. In a large pot, bring water to a boil and cook the pasta according to the package instructions. Drain and set aside.
  5. In a separate pan, sauté the chopped onion until golden brown.
  6. Add the chopped broccoli to the pan and cook until tender-crisp.
  7. Pour in the milk and let it simmer for a few minutes.
  8. Add the cooked pasta to the pan and toss to combine with the broccoli and onion mixture.
  9. Flake the cooked salmon and gently fold it into the pasta.
  10. Sprinkle the grated grana padano cheese over the top and let it melt slightly.
  11. Serve hot, garnished with an extra sprinkle of red pepper flakes for an added kick.
