Ingredients

  • 4 cans of sardines
  • 1 bunch of collard greens
  • Low-carb cereal
  • Olive oil
  • Salt
  • Pepper
  • Red pepper flakes

Instructions

  1. Prepare the Collard Greens: Wash the collard greens thoroughly and remove the tough stems. Roll the leaves and slice them into thin strips. Heat a frying pan over medium heat and add a splash of olive oil. Toss in the collard greens and sauté until they start to wilt. Season with salt, pepper, and a pinch of red pepper flakes for some heat.
  2. Cook the Sardines: Drain the sardines and pat them dry with paper towels. Season them with salt and pepper. In the same pan used for the collard greens, add a bit more olive oil. Carefully place the sardines in the pan and cook for a few minutes on each side until they are golden and crispy.
  3. Crunchy Low-Carb Cereal Topping: Crush the low-carb cereal into small pieces. Sprinkle the crushed cereal over the sardines for a satisfying crunch and added texture.
  4. Serve and Enjoy: Plate the fiery sardines on a bed of the sautéed collard greens. Garnish with an extra pinch of red pepper flakes for an extra kick.
