Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 onion, chopped
- 1/4 cup of dried fruits (raisins, apricots)
- 1 cup of cauliflower rice
- 1 1/2 cups of chicken or vegetable broth
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Heat the olive oil in a skillet over medium-high heat.
- Add the chopped onion and cook until softened.
- Add the shrimp to the skillet and cook until they turn pink and opaque.
- Stir in the dried fruits and cook for another minute.
- Transfer the cooked shrimp, onion, and dried fruits to the rice cooker.
