Fiery Tofu and Artichoke Curry

  • 400g Tofu
  • 2 Artichokes
  • 400ml Coconut Milk
  • Food Processor


  1. First, press the tofu to remove excess water by placing it between paper towels and putting a heavy weight on top.
  2. Once the tofu is pressed, cut it into small cubes and set aside.
  3. Prepare the artichokes by removing the tough outer leaves and cutting them into quarters.
  4. In a hot pan, sear the tofu cubes until they are golden brown on all sides. Set them aside.
  5. In the same pan, add the artichoke quarters and cook until they start to brown.
  6. Transfer the artichokes to a food processor and blend until they form a coarse paste.
  7. Return the pan to the heat and pour in the coconut milk, stirring to combine with any browned bits from the tofu and artichokes.
  8. Add the artichoke paste to the pan and stir well, allowing the flavors to meld together.
  9. Gently fold in the seared tofu cubes and let the curry simmer for 10-15 minutes, allowing the flavors to develop.
  10. Season with salt and pepper to taste.
  11. Serve the fiery tofu and artichoke curry over steamed rice and enjoy the explosive flavors.
