Fiesta Rice Bowl Recipe
What Started it all:
rice, cherry tomatoes, corn, salsa
Note: Feel free to add any additional toppings or garnishes of your choice, such as avocado slices, shredded cheese, or fresh cilantro.
Ingredients
- 2 cups rice
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- 1/2 cup salsa
Instructions
- Cook the rice according to the package instructions.
- In a large bowl, mix the cooked rice, cherry tomatoes, corn, and salsa.
- Stir well to combine all the ingredients.
- Divide the rice mixture into four serving bowls.
- Serve immediately and enjoy!
