Ingredients

  • 4 large onions, thinly sliced
  • 4 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 6 cups beef broth
  • 1 cup red wine
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 4 slices of French bread
  • 1 1/2 cups shredded Gruyere cheese

Instructions

  1. In a large pot, melt the butter over medium heat. Add the sliced onions and cook until caramelized, stirring occasionally.
  2. Sprinkle the flour over the caramelized onions and stir to coat.
  3. Pour in the beef broth and red wine. Add Worcestershire sauce, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Meanwhile, preheat the oven broiler. Place the French bread slices on a baking sheet and toast under the broiler until golden.
  5. Ladle the soup into oven-safe bowls. Place a slice of toasted French bread on top of each bowl of soup and sprinkle with Gruyere cheese.
  6. Broil the soup for 2-3 minutes, or until the cheese is melted and bubbly.
