Fresh and Healthy Okra Cottage Cheese Fritters

Ingredients
- 250g Cottage Cheese
- 200g Okra, finely chopped
- 1 teaspoon yeast
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh coriander for garnish
Instructions
- In a bowl, combine the cottage cheese, finely chopped okra, and yeast. Season with salt and pepper.
- Mix the ingredients well until they form a thick batter.
- Heat the olive oil in a skillet over medium heat.
- Using a spoon, scoop the batter and carefully place it in the skillet, shaping it into small fritters.
- Cook the fritters for 3-4 minutes on each side or until golden brown and crispy.
- Once done, remove the fritters from the skillet and place them on a plate lined with kitchen paper to absorb any excess oil.
- Garnish with fresh coriander and serve hot.
