Fresh Cottage Cheese Cucumber Cake

Ingredients

  • 500g cottage cheese
  • 1 large cucumber, peeled and grated
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 180°C.
  2. In a food processor, blend the cottage cheese until smooth.
  3. Add the grated cucumber and baking powder to the smooth cottage cheese and blend until well combined.
  4. Pour the mixture into a greased cake pan.
  5. Bake for 30-35 minutes, or until the cake is golden and set.
  6. Allow the cake to cool before slicing and serving.
