Fresh Mexican Chickpea and Pea Salad

What Started it all:
Chickpeas, Pea, olive oil, stove


  • 1 can of chickpeas, drained and rinsed
  • 1 cup of fresh peas
  • 3 tablespoons of olive oil


  1. *(Heat a stove over medium heat)*
  2. In a pan, add 1 tablespoon of olive oil and sauté the chickpeas for 3-4 minutes until they start to turn golden brown.
  3. In the same pan, add the fresh peas and cook for an additional 2-3 minutes until they are tender.
  4. *(Turn off the stove)*
  5. Transfer the cooked chickpeas and peas to a serving bowl.
  6. Drizzle the remaining olive oil over the salad and toss gently to coat all the ingredients.
  7. Season with salt and pepper to taste.
  8. Serve the salad fresh as a healthy and vibrant side dish for 4 people.
