Fresh Vegan Pressure Cooker Stew

  • 4 carrots, chopped
  • 1 cup of peas
  • 4 medium potatoes, diced
  • 4 cups of vegetable broth
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of thyme
  • 1 teaspoon of rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish


  1. Start by heating the pressure cooker over medium heat.
  2. Add the chopped onions and minced garlic, sauté until they turn translucent.
  3. Toss in the carrots, peas, and potatoes, and stir for a few minutes.
  4. Pour in the vegetable broth, thyme, and rosemary, season with salt and pepper.
  5. Secure the pressure cooker lid and cook on high pressure for about 5 minutes.
  6. Release the pressure, carefully open the lid, and give the stew a good stir.
  7. Serve the stew hot, garnished with fresh parsley.
