Ingredients
- 8 egg roll wrappers
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup bean sprouts
- 1/2 cup chopped green onions
- 1/2 cup cooked and shredded chicken or pork (optional)
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- In a large skillet or wok, heat a tablespoon of vegetable oil over medium-high heat.
- Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
- Add the shredded cabbage, carrots, and bean sprouts to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
- If using, add the cooked and shredded chicken or pork to the skillet and mix well.
- Stir in the soy sauce, oyster sauce (if using), sesame oil, and chopped green onions. Season with salt and pepper to taste.
- Remove the skillet from heat and let the filling cool slightly.
- Lay out an egg roll wrapper in a diamond shape, with one corner pointing towards you.
- Place about 2-3 tablespoons of the filling in the center of the wrapper.
- Fold the bottom corner of the wrapper over the filling, then fold in the left and right corners.
- Roll the wrapper tightly towards the top corner, sealing the edge with a bit of water.
- Repeat with the remaining wrappers and filling.
- In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Carefully place a few egg rolls into the hot oil, being careful not to overcrowd the pan.
- Fry the egg rolls for about 3-4 minutes, turning occasionally, until they are golden brown and crispy.
- Remove the egg rolls from the oil and drain on paper towels.
- Repeat with the remaining egg rolls.
- Serve the fried egg rolls hot with your favorite dipping sauce, such as sweet and sour sauce, soy sauce, or chili sauce.
