Ingredients
- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar

- 4 sheets of nori (seaweed)
- 1 cup tempura batter mix
- 1/2 cup cold water
- 1/2 cup flour
- 1 avocado (sliced)
- 1 cucumber (sliced into strips)
- Soy sauce (for dipping)

- Wasabi (optional)
- Vegetable oil (for frying)
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rice and 2 1/2 cups of water in a rice cooker and cook according to the manufacturer's instructions.
- Once cooked, transfer the rice to a large bowl and let it cool slightly.
- In a small saucepan, combine the rice vinegar, sugar, and salt. Heat until the sugar and salt dissolve.
- Pour the vinegar mixture over the rice and mix gently to combine. Let the rice cool to room temperature.
- In a medium bowl, mix the tempura batter mix with 1/2 cup of cold water until smooth.
- Place the flour in a separate bowl.
- Heat vegetable oil in a deep frying pan or wok over medium-high heat.
- Dip each bamboo shoot strip first in the flour, then in the tempura batter.
- Fry the bamboo shoots in the hot oil until golden brown and crispy. Remove and drain on paper towels.
- Place a sheet of nori on a bamboo sushi mat.
- Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
- Arrange a few strips of fried bamboo shoots, avocado slices, and cucumber strips along the bottom edge of the rice.
- Using the bamboo mat, carefully roll the sushi tightly, pressing gently to seal.
- Repeat with the remaining ingredients to make four rolls.
- Using a sharp knife, slice each sushi roll into 8 pieces.
- Arrange the sushi on a serving platter.
- Serve with soy sauce, pickled ginger, and wasabi on the side.
