Garlic Roasted Chicken Breast with Crispy Potatoes

Enjoy your delicious garlic roasted chicken breast with crispy potatoes!


  • 1 boneless chicken breast
  • 2 small or 1 large potato, sliced or cut in cubes
  • 2 cloves of garlic, minced
  • 2 tbsp of olive oil
  • 1 tsp of dried thyme
  • Salt and pepper to taste


  1. Preheat the oven to 375°F.
  2. Wash and dry the chicken breast with a paper towel.
  3. In a small bowl, mix minced garlic, olive oil, dried thyme, salt, and pepper to create a marinade.
  4. Rub the marinade all over the chicken breast and place it in a baking dish.
  5. Place the sliced or cubed potatoes around the chicken breast.
  6. Drizzle the remaining marinade over the potatoes.
  7. Bake for 25-30 minutes or until the chicken is cooked through, and the potatoes are crispy and browned.
  8. Serve hot with a side salad or steamed veggies.
