Ingredients
- 1 boneless chicken breast
- 2 small or 1 large potato, sliced or cut in cubes
- 2 cloves of garlic, minced
- 2 tbsp of olive oil
- 1 tsp of dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- Wash and dry the chicken breast with a paper towel.
- In a small bowl, mix minced garlic, olive oil, dried thyme, salt, and pepper to create a marinade.
- Rub the marinade all over the chicken breast and place it in a baking dish.
- Place the sliced or cubed potatoes around the chicken breast.
- Drizzle the remaining marinade over the potatoes.
- Bake for 25-30 minutes or until the chicken is cooked through, and the potatoes are crispy and browned.
- Serve hot with a side salad or steamed veggies.
