Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup ice water
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 cup mixed berries (blueberries, strawberries, raspberries)
- 2 medium apples, peeled, cored, and sliced
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp cornstarch
- 1 egg, beaten (for egg wash)
- 1 tbsp coarse sugar (for topping)
Instructions
- In a large bowl, combine the all-purpose flour and salt.
- Add the chilled and cubed butter to the flour mixture. Using a pastry cutter or your hands, mix until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, until the dough begins to come together.
- Divide the dough into two equal parts, shape them into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- In a large mixing bowl, combine the granulated sugar, brown sugar, ground cinnamon, ground nutmeg, and cornstarch.
- Add the mixed berries, sliced apples, vanilla extract, and lemon juice to the sugar mixture. Toss gently to combine and coat the fruits evenly.
- Preheat your oven to 375°F (190°C).
- On a lightly floured surface, roll out one disc of the chilled dough to fit a 9-inch pie dish. Carefully transfer the rolled dough to the pie dish.
- Pour the fruit filling into the pie crust, spreading it out evenly.
- Roll out the second disc of dough and place it over the filling. Trim and crimp the edges to seal the pie.
- Cut a few small slits in the top crust to allow steam to escape.
- Brush the top crust with the beaten egg and sprinkle with coarse sugar.
- Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
- If the edges of the crust begin to brown too quickly, cover them with foil to prevent burning.
- Allow the pie to cool on a wire rack for at least 2 hours before serving. This helps the filling to set and makes slicing easier.
Your Gemini Pie is now ready to be enjoyed! The combination of mixed berries and apples creates a delightful harmony of flavors that will surely satisfy your taste buds. Serve with a scoop of vanilla ice cream or a dollop of whipped cream for an extra special treat. Enjoy!
