Gluten-Free Air Fryer Cod with Green Beans and Onions

A simple, delicious gluten-free meal made with cod fillets, green beans, and onions, all cooked to perfection in an air fryer.
Ingredients
- 4 cod fillets
- 400g green beans, trimmed
- 1 large onion, thinly sliced
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 lemon, cut into wedges (for serving)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Pat the cod fillets dry with a paper towel. Season generously with salt and pepper.
- In a large bowl, toss the green beans and sliced onions with olive oil, salt, and pepper until nicely coated.
- Set your air fryer to 180°C (350°F) and preheat for about 5 minutes.
- Place the green beans and onions in the air fryer basket. Cook for 10 minutes, shaking the basket halfway through.
- Place the seasoned cod fillets on top of the green beans and onions. Cook for an additional 10-12 minutes until the cod is opaque and flakes easily with a fork.
- Carefully remove the cod and veggies from the air fryer. Serve with fresh lemon juice squeezed over the top and sprinkle with chopped parsley if desired.
