Gluten-Free Pea and Egg Soup

This delightful gluten-free soup recipe combines the freshness of peas with the comforting richness of eggs. It’s a perfect dish for a cozy gathering of four, and the best part is, it’s all made in a blender!
Ingredients
- 4 eggs
- 2 cups of peas
- 4 cups of hot tea (gluten-free)
- Salt and pepper to taste
Instructions
- Prepare the Eggs: Place the eggs in a pot, cover them with water, and bring to a gentle boil. Let them boil for 6-7 minutes for a perfect soft-boiled texture. Once done, cool them in cold water and peel.
- Blitz the Peas: In a blender, add the peas and a cup of hot tea. Blend until you achieve a smooth, vibrant green puree.
- Combine the Soup: Pour the pea puree into a saucepan, add the remaining hot tea, and heat it gently. Season with salt and pepper to taste.
- Serve: Ladle the pea soup into bowls. Slice the soft-boiled eggs in half and place them on top of the soup. Enjoy the comforting and fresh flavors!
