Gluten-Free Skillet Cod with Spinach and Potatoes

Ingredients
- 4 cod fillets
- 4 cups fresh spinach
- 4 medium potatoes, thinly sliced
- Olive oil
- Salt and pepper to taste
- Garlic powder
- Paprika
- Lemon wedges for serving
Instructions
- Preheat a large skillet over medium heat.
- Drizzle some olive oil in the skillet.
- Season both sides of the cod fillets with salt, pepper, garlic powder, and paprika.
- Place the seasoned cod fillets in the skillet and cook for 4-5 minutes on each side, or until the fish is cooked through and easily flakes with a fork.
- Remove the cod from the skillet and set aside.
- In the same skillet, add a bit more olive oil if needed.
- Add the thinly sliced potatoes and cook for 3-4 minutes on each side, or until they are golden and crispy.
- Push the potatoes to one side of the skillet and add the fresh spinach to the other side.
- Cook the spinach for 1-2 minutes, or until wilted.
- Once the spinach is wilted, mix it with the potatoes.
- Return the cod fillets to the skillet and heat for another minute to warm through.
- Serve the skillet cod with spinach and potatoes with a squeeze of fresh lemon juice on top.
