Gluten-Free Stir Fry Beef with Bok Choy and Dried Fruits

Ingredients
- 1 lb Stir Fry Beef (sliced into thin strips)
- 2 bunches of Bok Choy (washed and drained)
- 1/2 cup Dried Fruits (raisins and apricots)
- 2 tbsp Olive Oil
- 2 cloves Garlic (minced)
- 1 tsp Ginger (grated)
- Salt and Pepper to taste
- 2 tbsp Gluten-Free Soy Sauce
- 1 tbsp Honey
Instructions
- Preheat the sous vide machine to 130°F (54°C).
- In a large bowl, whisk together olive oil, garlic, and ginger. Add the sliced beef and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Remove the beef from the marinade and season with salt and pepper. Place the beef in a sous vide bag and seal.
- Place the sous vide bag in the preheated water bath and cook for 1-2 hours, or until the beef reaches your desired level of doneness.
- While the beef is cooking, heat a large skillet or wok over medium-high heat. Add the bok choy and cook until it's slightly wilted, about 2-3 minutes.
- Add the dried fruits to the skillet and stir to combine. Cook for an additional minute.
- Remove the beef from the sous vide bag and slice it against the grain.
- Add the sliced beef to the skillet and stir to combine with the bok choy and dried fruits. Season with gluten-free soy sauce and honey to taste.
