Gluten-Free Sweet Potato Protein Pancakes

Ingredients
- 2 cups of sweet potato, peeled and grated
- 4 scoops of whey protein powder
- 4 tablespoons of honey
- Cooking spray or oil for the rice cooker
Instructions
- Preheat the rice cooker.
- In a large bowl, mix the grated sweet potato, whey protein powder, and honey until well combined.
- Spray the rice cooker with cooking spray or lightly grease it with oil.
- Scoop the sweet potato mixture into the rice cooker and spread it evenly.
- Close the rice cooker and cook for about 8-10 minutes, or until the pancake is golden brown and cooked through.
- Carefully remove the pancake from the rice cooker and let it cool for a few minutes.
- Cut the pancake into quarters and serve warm.
