This gluten-free recipe combines the savory flavors of turkey and the vibrant freshness of spinach, complemented by the subtle sweetness of dried fruits. The result is a delicious and nutritious dish that is sure to satisfy your taste buds.

Ingredients

  • 1 pound ground turkey
  • 2 cups fresh spinach, chopped
  • 1/2 cup dried fruits (raisins, apricots), finely chopped
  • Salt and pepper to taste
  • 1/4 cup water
  • Olive oil
  • Toothpicks

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the ground turkey, chopped spinach, dried fruits, salt, and pepper until well combined.
  3. Lay out a piece of plastic wrap and place a portion of the turkey mixture on top.
  4. Roll the turkey mixture into a log shape, using the plastic wrap to help shape and secure it.
  5. Repeat the process with the remaining turkey mixture.
  6. Heat a drizzle of olive oil in a skillet over medium-high heat.
  7. Sear the turkey rolls on all sides until golden brown.
  8. Transfer the seared rolls to a baking dish and add 1/4 cup of water to the dish.
  9. Cover the dish with foil and bake in the preheated oven for 20-25 minutes, or until the turkey is cooked through.
  10. Remove the foil and continue to bake for an additional 5-10 minutes to brown the tops.
  11. Once cooked, remove the toothpicks and slice the turkey rolls into rounds.
