Gordon's Cheesy Meatball Potatoes
A hearty and comforting dish that combines succulent meatballs, creamy potatoes, and a generous amount of cheese. This recipe is perfect for feeding a hungry crowd of four.
Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped green onions
Instructions
- In a mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, chopped parsley, garlic powder, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
- Shape the mixture into meatballs, about 1 inch in diameter. Place the meatballs on a baking sheet lined with parchment paper.
- Preheat the oven to 400°F (200°C). Bake the meatballs for 20 minutes, or until they are cooked through and golden brown.
- While the meatballs are cooking, bring a large pot of salted water to a boil. Add the diced potatoes and cook until they are tender, about 10-15 minutes. Drain the potatoes and return them to the pot.
- Mash the potatoes with a potato masher until they are smooth and creamy. Season with salt and pepper to taste.
