Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions

Instructions

  1. In a mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, chopped parsley, garlic powder, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  2. Shape the mixture into meatballs, about 1 inch in diameter. Place the meatballs on a baking sheet lined with parchment paper.
  3. Preheat the oven to 400°F (200°C). Bake the meatballs for 20 minutes, or until they are cooked through and golden brown.
  4. While the meatballs are cooking, bring a large pot of salted water to a boil. Add the diced potatoes and cook until they are tender, about 10-15 minutes. Drain the potatoes and return them to the pot.
  5. Mash the potatoes with a potato masher until they are smooth and creamy. Season with salt and pepper to taste.
  6. Transfer the mashed potatoes to a baking dish. Arrange the cooked meatballs on top of the mashed potatoes.
  7. Sprinkle the shredded cheddar cheese and mozzarella cheese over the meatballs and mashed potatoes.
  8. Place the baking dish in the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Remove the dish from the oven and garnish with chopped green onions.
  10. Serve hot and enjoy the cheesy goodness of Gordon's Cheesy Meatball Potatoes!
