Gordon's Roasted Turkey with Potatoes, Corn, and Carrots

Ingredients
- 1 whole turkey (approximately 12 pounds)
- 4 large potatoes, peeled and quartered
- 4 ears of corn, husked and cut into thirds
- 4 carrots, peeled and cut into chunks
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Place the turkey on a roasting rack in a large roasting pan. Season the turkey generously with salt and pepper, both inside and out.
- In a separate bowl, toss the potatoes, corn, and carrots with olive oil, salt, and pepper until well coated.
- Arrange the vegetables around the turkey in the roasting pan.
- Roast the turkey in the preheated oven for approximately 3 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Every 30 minutes, baste the turkey with the pan drippings to keep it moist and flavorful.
- About 30 minutes before the turkey is done, increase the oven temperature to 425°F (220°C) to crisp up the skin.
- Once the turkey is cooked, remove it from the oven and let it rest for at least 20 minutes before carving.
- Serve the roasted turkey with the potatoes, corn, and carrots on the side.
