This Greek-inspired dish combines the succulent flavors of pork loins with the earthy sweetness of beets and the comforting texture of rice, all cooked to perfection in a pressure cooker. It’s a hearty and wholesome meal that’s sure to delight your taste buds.

Ingredients

  • 4 pork loins
  • 2 beets, peeled and diced
  • 1 1/2 cups rice
  • Water
  • Salt and pepper to taste
  • Olive oil
  • Lemon wedges for serving

Instructions

  1. Season the pork loins with salt and pepper.
  2. Heat some olive oil in the pressure cooker and brown the pork loins on all sides.
  3. Add the diced beets and rice to the pressure cooker.
  4. Pour in enough water to just cover the ingredients.
  5. Close the pressure cooker and cook on high pressure for 15 minutes.
  6. Once done, release the pressure and open the cooker.
  7. Serve the Greek beet and pork rice with a squeeze of fresh lemon juice.
