Ingredients

- 1 cucumber, diced
- 100g feta cheese, crumbled
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt, pepper, and dried oregano.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until cooked through. Set aside and let them rest.
- Bring a pot of salted water to a boil. Add the green beans and cook for about 3 minutes. Shock them in ice water to stop the cooking process. Drain and set aside.
- Dice the cucumber into bite-sized pieces.
- In a large bowl, combine the green beans and cucumber. Crumble the feta cheese over the top. Slice the rested chicken breasts thinly and add them to the bowl.
- In a small bowl, whisk together the remaining 1 tablespoon of olive oil and the lemon juice. Pour this over the salad and toss everything together. Season with salt and pepper to taste.
