Ingredients
- 1 cup Balsamic Rice
- 2 tablespoons Elderberry Concentrate
- 1/2 cup fresh Mint, chopped
- 1/2 cup Almond Silvers, toasted
- 1 teaspoon Lovage Salt Blend
- 2 large Oranges, segmented
- 4 cups water or vegetable broth (for cooking rice)
Instructions
- Cook the Balsamic Rice: In a medium saucepan, bring 4 cups of water or vegetable broth to a boil. Add the balsamic rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 35-40 minutes, or until the rice is tender and the liquid is absorbed. Once done, fluff with a fork and let it cool.
- Prepare the Dressing: In a small bowl, mix the elderberry concentrate with a pinch of lovage salt blend. Stir well to combine.
- Combine Ingredients: In a large mixing bowl, combine the cooled balsamic rice, chopped mint, toasted almond silvers, and orange segments.
- Dress the Salad: Drizzle the elderberry dressing over the rice mixture. Gently toss everything together until well combined, ensuring the dressing coats all the ingredients.
- Taste and Adjust: Taste the salad and adjust the seasoning if necessary, adding more lovage salt blend or elderberry concentrate to your liking.
- Serve: Transfer the salad to a serving platter or individual bowls. Garnish with extra mint leaves if desired.
