Greek-inspired Air Fried Sardines with Turnip and Peanut Butter

This Greek-inspired recipe is a quick and easy way to enjoy the flavors of the Mediterranean. With a few simple ingredients and an air fryer, you can create a delicious and nutritious meal for four people.

Ingredients

  • 8 fresh sardines, cleaned and gutted
  • 2 medium turnips, peeled and sliced into wedges
  • 4 tablespoons of creamy peanut butter
  • Olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Fresh parsley for garnish

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Drizzle the turnip wedges with olive oil and season with salt and pepper. Place them in the air fryer basket and cook for 10 minutes, shaking the basket halfway through, until the turnips are golden and tender.
  3. While the turnips are cooking, season the sardines with salt and pepper, inside and out.
  4. Carefully spread a tablespoon of peanut butter inside each sardine.
  5. Place the sardines in the air fryer basket in a single layer and cook for 8-10 minutes, until the sardines are cooked through and the peanut butter is golden and bubbly.
  6. Serve the air-fried sardines and turnip wedges with lemon wedges and garnish with fresh parsley.
