Greek Lemon Chicken with Carrots and Potatoes

This dish is perfect for a hearty and flavorful Greek dinner. The combination of tender chicken breast, sweet carrots, and crispy potatoes, all infused with the tangy and zesty flavor of lemon, is absolutely irresistible.

Ingredients

  • 4 chicken breasts, skinless and boneless
  • 4 large carrots, peeled and cut into chunks
  • 4 large potatoes, peeled and cut into chunks
  • 2 lemons, juiced
  • 4 cloves of garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken with salt, pepper, oregano, and thyme.
  3. In a large bowl, combine the chicken, carrots, potatoes, garlic, lemon juice, and olive oil. Toss everything together until the chicken and vegetables are coated with the mixture.
  4. Transfer everything to a large baking dish or roasting pan, and arrange the chicken in the center surrounded by the vegetables.
  5. Bake for 45-50 minutes or until the chicken is cooked through and the vegetables are tender and caramelized.
  6. Serve the lemon chicken with carrots and potatoes hot, garnished with fresh herbs if desired.
