Greek Pea and Tomato Frittata

What Started it all:
Eggs, Pea, tomato paste, wok


  • 8 eggs
  • 1 cup of peas
  • 2 tablespoons of tomato paste
  • 1 wok


  1. First, crack the eggs into a bowl and beat them until they are well combined.
  2. Heat the wok over medium heat and add a splash of olive oil.
  3. Toss in the peas and stir-fry them for a couple of minutes until they are tender.
  4. Add the tomato paste to the wok and stir it into the peas until it's well incorporated.
  5. Pour the beaten eggs over the pea and tomato mixture in the wok.
  6. Let the frittata cook for a few minutes until the edges start to set.
  7. Then, carefully slide a spatula underneath the frittata and flip it over to cook the other side.
  8. Cook the frittata for a few more minutes until it's set in the middle but still slightly runny.
  9. Slide the frittata onto a plate and cut it into wedges.
