Greek Seitan Souvlaki with Cabbage Slaw

This Greek-inspired recipe combines the meaty texture of seitan with a flavorful cabbage slaw, creating a delicious and satisfying dish for 4 people.
Ingredients
- 1 package of seitan, cut into cubes
- 1/2 head of cabbage, thinly sliced
- 1 can of mixed vegetables, drained
- 1/4 cup of olive oil
- 2 cloves of garlic
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 4 pita breads
Instructions
- In a blender, combine the olive oil, garlic, oregano, thyme, salt, and pepper. Blend until smooth to create a marinade.
- Place the seitan cubes in a bowl and pour the marinade over them. Toss to coat the seitan evenly. Let it marinate for at least 30 minutes.
- In a separate bowl, combine the sliced cabbage and canned vegetables. Toss to mix well.
- In a large skillet over medium heat, cook the marinated seitan cubes until browned and slightly crispy, about 5-7 minutes.
- Warm the pita breads in the skillet or oven.
- Assemble the souvlaki by placing the cooked seitan in the warm pita breads and topping with the cabbage slaw.
- Serve the souvlaki with extra marinade on the side for added flavor.
