Greek Style Chicken Breast with Carrots

Ingredients
- 1 chicken breast
- 2 medium-sized carrots
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cut the chicken breast into thin slices, about 1/4 inch thick.
- Peel the carrots and slice them thinly, at a slight angle.
- In a small bowl, mix together oregano, thyme, garlic powder, salt, and pepper.
- Place chicken slices on a baking sheet lined with parchment paper.
- Drizzle olive oil over the chicken slices and add the seasoning mixture. Rub the seasoning mix into the chicken.
- Add the sliced carrots to the baking sheet, seasoning them with salt and pepper.
- Bake for 20-25 minutes or until the chicken is cooked through and the carrots are tender and crispy.
- Serve hot with rice, salad or as desired.
