Greek Style Chicken Breast with Carrots

Ingredients

  • 1 chicken breast
  • 2 medium-sized carrots
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the chicken breast into thin slices, about 1/4 inch thick.
  3. Peel the carrots and slice them thinly, at a slight angle.
  4. In a small bowl, mix together oregano, thyme, garlic powder, salt, and pepper.
  5. Place chicken slices on a baking sheet lined with parchment paper.
  6. Drizzle olive oil over the chicken slices and add the seasoning mixture. Rub the seasoning mix into the chicken.
  7. Add the sliced carrots to the baking sheet, seasoning them with salt and pepper.
  8. Bake for 20-25 minutes or until the chicken is cooked through and the carrots are tender and crispy.
  9. Serve hot with rice, salad or as desired.
