Greek-style Roasted Chicken with Carrots

Ingredients

  • 2 chicken breasts
  • 4 carrots, peeled and sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, combine the garlic, oregano, thyme, rosemary, salt, pepper, and olive oil. Mix well.
  3. Add the chicken breasts and carrots to a large baking dish.
  4. Pour the marinade over the chicken and carrots. Toss until the veggies are well-coated.
  5. Roast in the oven for about 40-45 minutes, or until the chicken is cooked through and the carrots are tender.
  6. Remove from the oven and let it rest for 5 minutes.
