Greek-style Roasted Chicken with Carrots
What Started it all:
chicken breast, carrots
Ingredients
- 2 chicken breasts
- 4 carrots, peeled and sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 cup olive oil
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, combine the garlic, oregano, thyme, rosemary, salt, pepper, and olive oil. Mix well.
- Add the chicken breasts and carrots to a large baking dish.
- Pour the marinade over the chicken and carrots. Toss until the veggies are well-coated.
- Roast in the oven for about 40-45 minutes, or until the chicken is cooked through and the carrots are tender.
- Remove from the oven and let it rest for 5 minutes.
