Greek-style Roasted Chicken with Carrots and Potatoes

This classic Greek dish features tender chicken breast, sweet carrots, and hearty potatoes roasted to perfection with aromatic herbs and spices.

Ingredients

  • 4 chicken breasts, skin on
  • 4 medium-sized carrots, peeled and sliced
  • 4 medium-sized potatoes, peeled and cut into wedges
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tbsp. dried oregano
  • 1 tbsp. dried thyme
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 lemon, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together minced garlic, oregano, thyme, smoked paprika, salt, pepper, and olive oil until evenly combined.
  3. In a large baking dish, place the chicken breasts skin side up.
  4. Add the sliced carrots and potato wedges around the chicken.
  5. Drizzle the herb mixture evenly over the chicken, carrots, and potatoes to coat well.
  6. Arrange lemon slices on top of the chicken.
  7. Roast in the oven for 35-40 minutes or until the chicken is cooked through and the potatoes are fork-tender.
  8. Remove from the oven and allow to rest for a few minutes before serving.
