Greek-Style Stuffed Turnip with Turkey and Dried Fruits

Ingredients
- 1 large turnip, peeled and hollowed out
- 1 lb ground turkey
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup dried raisins
- 1/4 cup dried apricots
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium-high heat. Add the garlic and cook for 1 minute.
- Add the ground turkey to the skillet, breaking it up with a spoon as it cooks. Cook until the turkey is no longer pink, about 5-7 minutes.
- Stir in the chopped parsley, mint, raisins, apricots, oregano, salt, and pepper. Cook for 1 minute.
- Stuff the hollowed-out turnip with the turkey mixture, dividing it evenly.
- Place the stuffed turnip on a baking sheet and bake for 30-35 minutes, or until the turnip is tender.
- Use a blender to puree the remaining turkey mixture with a little bit of the turnip's juices to create a sauce. Serve the sauce over the stuffed turnip.
