Grilled Beef Tenderloin with Caramelized Onions and a Twist of Vinegar

A deliciously easy recipe for a special occasion or a quick weeknight dinner!

Ingredients

  • 1 (1.5-2 pound) beef tenderloin
  • 2 large onions, sliced
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons balsamic vinegar
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat that grill! Get your grill heated to medium-high heat. I like to use a gas grill, but charcoal works too, honey!
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-low heat. Add the sliced onions and cook, stirring occasionally, for 20-25 minutes or until they're dark golden brown and caramelized.
  3. While the onions are cooking, season the beef tenderloin with salt and pepper. Don't be shy, now! You want that flavor to pop!
  4. Grill the beef tenderloin for 4-5 minutes per side, or until it reaches your desired level of doneness. Let it rest for 5 minutes before slicing.
  5. In a small bowl, whisk together the apple cider vinegar and balsamic vinegar. Brush the mixture over the grilled beef tenderloin during the last minute of cooking.
  6. Slice the beef against the grain and serve with those gorgeous caramelized onions. Garnish with chopped parsley, if you're feeling fancy.
