Let's get this Mediterranean party started with a dish that's as easy as it is delicious - grilled cod, crispy asparagus, and crunchy nuts!


  • 4 cod fillets (6 oz each)
  • 1 lb fresh asparagus, trimmed
  • 1/2 cup chopped almonds
  • 1/4 cup chopped walnuts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)


  1. Preheat your grill to medium-high heat.
  2. Rinse the cod fillets under cold water, pat dry with paper towels, and season with salt, pepper, and garlic powder.
  3. Brush the asparagus with olive oil and season with salt and pepper.
  4. Grill the asparagus for 3-4 minutes per side, or until tender and slightly charred.
  5. Grill the cod fillets for 4-5 minutes per side, or until cooked through.
  6. Meanwhile, mix the chopped almonds and walnuts in a small bowl.
  7. Serve the grilled cod with the asparagus and a sprinkle of the nut mixture. Garnish with chopped parsley, if desired.
