Grilled Cod with Pea and Bean Salad

A light and flavorful low carb dish that combines the flakiness of grilled cod with a refreshing pea and bean salad. This recipe is perfect for a healthy and satisfying meal for four people.

Ingredients

  • 4 cod fillets
  • 1 cup peas
  • 1 cup mixed beans (such as black beans, kidney beans, or chickpeas)
  • Olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the cod fillets with salt, pepper, and a drizzle of olive oil.
  3. Place the cod fillets on the grill and cook for 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.
  4. While the cod is grilling, blanch the peas in boiling water for 2 minutes, then transfer to an ice bath to cool. Drain and set aside.
  5. In a bowl, combine the blanched peas and mixed beans. Drizzle with olive oil and season with salt and pepper. Toss to combine.
